Cinco De Mayo Casserole May 2013

My inspiration recipe this round was found on pinterest.

Wanting a quicker faster method I skipped a few steps and bought more prepared ingredients.




Shredded Chicken (vons now sells it in the deli, rotisserie chicken pre-shredded)
1 can enchillada sauce
1 small package corn (or flour) tortillas
1 can diced tomatoes
1 can black olives
2 cups shredded cheese
(can also add a can of corn, diced peppers, onions, etc)

adjust portions based on a 9X9 or a 9X13 casserole baker

layer ingredients in (leaving cheese on top)

Bake at 350 degrees for 40 minutes
